Christmas Baking with Author Judith Ingram
I’m convinced the world is divided into two kinds of people: those who love nuts and those who do not. No, we’re not talking spouses here. We’re talking about those crunchy little surprises that elevate brownies and salads and fried fish breading into an art form. My grandmother added nuts to everything imaginable; my mother hated them. I love them but learned to cook brownies with walnuts sprinkled on the top so my daughter could pick them out. Go figure. Nuts make the world a much more interesting place. (Well, yes, we could be talking in-laws here…)
One of my favorite holiday treats is Chewy Walnut Squares. These are super easy, especially if you bake them in square throwaway foil pans. Make a bunch for Christmas cookie exchanges or just to have on hand when friends stop by for some Christmas cheer.
Chewy Walnut Squares
1 egg, unbeaten
1 cup brown sugar
1 teaspoon vanilla
½ cup sifted all-purpose flour
¼ teaspoon baking soda
¼ teaspoon salt
I cup coarsely chopped walnuts
Stir together egg, brown sugar, and vanilla. Quickly stir in flour, baking soda, and salt. Add walnuts. Spread in a greased 8-inch square pan. Bake at 350 degrees for 18-20 minutes. (Cookies should be soft in the center when taken from the oven.) Cool in the pan; cut into 2-inch squares. Makes 16 squares.
